1-2 lbs Pork (Cubed)
1 Egg
1 C Water
2 Tbsp Cornstarch
C Catsup
C Brown sugar
2 Tbsp Sugar
1 Tbsp Vinegar
1" piece Fresh Ginger (Crushed)
1 small can Pineapple chunks
1 Bell pepper
1 Onion
3 stalks Celery, sliced
1 Carrot, sliced
3-5 drops Red food coloring
Cooking Instructions
Cut up pork into 1 inch cubes and marinate with one egg, a little sherry, soy sauce, a tablespoon of corn starch, tablespoon of flour, and salt. Coat pieces of meat with flour and brown meat in frying pan with about inch of frying oil. Set aside to drain on paper napkin. Cut up vegetables into small bite size chunks and set aside. In a small pot, add water, catsup, sugar, vinegar, food coloring, and piece of ginger to simmer on medium heat for about 20 minutes in order to reduce liquid. Add cornstarch and water to thicken, and lastly, add raw vegetables and pineapple chunks for 30 seconds. Pour over pre-cooked pork and serve.
