Oyster Sauce Chicken Wings

Ingredients
2 lbs Chicken wings
2 Scallions, chopped
4 thin slices Fresh ginger
1 cup sliced Mushrooms
3 Tbsp Peanut or vegetable oil
Sauce:
1/2 C Oyster sauce
1 Tbsp Sherry
3/4 C Water
1 Tbsp Dark soy sauce
1/2 tsp Sugar
1 Tbsp Cornstarch
1/4 tsp Salt (optional)
Cooking Instructions
Heat 3 Tbsps oil in a heavy casserole over medium flame. Add scallions & ginger & sizzle 1/2 min. Add chicken wings & stir fry 2 mins. Add sliced mushrooms & stir fry 2 mins. Add the sauce & bring to a boil. Cover pot, lower flame, & simmer 1 hour. Stir every 10 mins. to prevent sticking. Serve with rice.
