Oven Kalua Pork with Fresh Spinach

4-5 lbs Pork butt
2-3 lbs Fresh spinach
1 Tbsp Hawaiian salt
3 Tbsp Shoyu
3/4 tsp Garlic, minced
1 Tsp Ginger, grated
Few drops Liquid smoke
Cooking Instructions
Combine sauce mixture in small bowl. Rub sauce over pork butt and let sit for a couple of hours. Wash spinach thoroughly. Line a large roasting pan with 1/2 the spinach leaves. Make it at least an inch or more thick. Place the marinated pork on the spinach. Place the rest of the spinach leaves on top of and around the pork butt. Really put it on there. Place a sheet of thick foil on top so that it completely covers the pan with some hang over - crimp this all around to the edges of the pan to really seal it up tight. Bake at 325 degrees for around 4 hours. Before serving - use 2 forks or fingers to shred the pork. There should still be some of the spinach left to shred into it. Absolutely ono-delicious.
