Okinawan Spareribs

3 lbs. pork ribs, 2" x 2" pieces
2/3 cup sugar
1/3 cup awamori (or sake)
2/3 cup shoyu
Cooking Instructions
Place ribs in a sauce pan, add water to cover. Cover & simmer until ribs are tender. Drain all but 1 cup of the cooking liquid. Add sugar & awamori, then cook, uncovered until liquid is reduced to a half. Add shoyu & cook until most of the liquid is gone, turning ribs occasionally to glaze.
