Lazy Kine Lau Laus

2 lbs Luau (taro leaves) - substitute with 2-3 lbs of fresh spinach.
6 lean Pork chops
3/4 lb Salted butterfish
6 small Sweet potatoes, pared
1/4 C Butter or margarine
Cooking Instructions
Grease a 13x9-inch baking pan. Wash Luau thoroughly several times. Remove stem and fibrous part of veins. Place 1/2 of damp luau leaves in prepared pan. Arrange pork chops on leaves. Cut butterfish in 6 pieces and put a piece on top of each pork chop. Cover with remaining luau. Arrange sweet potatoes on top and dot with butter. Cover pan tightly and bake at 350 degrees for 3 1/2 hours. Makes 6 servings.
