Iggy's Smoked Brok Da Mout Chicken

Ingredients
1 Whole chicken fryer cut in half
2 Tbls Hawaiian salt (rock salt)
2 Tbls minced garlic
2 Tbls minced ginger
2 Tbls brown sugar
1 small lemon cut in half
1 small orange cut in half
1 small lime cut in half
1/2 cup shoyu (mild)
1 small can sweetened pineapple juice
Pepper to taste
Smoked wood chips
Cooking Instructions
Wash, rinse and pat dry chicken. Rub thoroughly all items EXCEPT shoyu and pineapple juice. Refrigerate for at least 2 hours. Soak wood chips with pineapple juice. Just before cooking drizzle shoyu on chicken. Place wood chips in grill or smoker and place chicken skin up and COVER. SLOW COOK CHICKEN turning over after the first half hour (den turn weneva).

IGGYS NOTE: Da trick is to slow cook and make shua the wood chips burn slow betta yet it no burn just stey smokey. Wen pau, the chicken should be tender but crispy on the outside... it becomes crispy at the end wen stey all pau to your liking. Just open the grill and let the flame slightly darken the skin.
