Island Beer Chicken

2 C Beer
1/2 C Vegetable oil
1/2 C Dijon mustard
1 Tbsp Sweet paprika
1 tsp Pepper
1 medium Maui onion
12 clove Garlic sliced thin (that's right 12)
2 Bay leaves fresh or dried (if fresh, remember to bruise the leaves to release flavor)
1 Chicken quartered
Kosher salt or Hawaiian salt
Cooking Instructions
In a bowl add beer, paprika, Dijon mustard, pepper and whisk while adding oil. Blend thoroughly. Add garlic, onions, bay leaf. Put chicken in zip lock bag. Pour in beer marinade and let sit for 2 days or at least six hours. The longer the mo better. When ready fo grill, season chicken with the salt and reserve the marinade for basting. Grill chicken on the hottest part of the grill, skin side down until well browned. Then move to cooler part of grill. When ready to turn chicken move back to hottest part and brown the other side. Once browned, again move back to cooler part of grill. Brush marinade over chicken during the beginning 10 minutes. Serve immediately!

Note: You should choose a good quality beer. The type of beer will change the flavor of the chicken and how you BBQ it with or without wood chips in your charcoal)
