1 1-1/2 lbs whole fish
1 Tbsp Wine
1/2 tsp Salt
Oil for deep frying
Sauce - Mix together
3 Tbsp Soy sauce
1 Tbsp Vinegar
1-1/2 tsp Sesame oil
1-1/2 tsp Sugar
1-1/2 tsp Ginger, chopped
1-1/2 tsp Garlic, chopped
2 Tbsp green onions, chopped
1 small Hot green Serrano chile, sliced
Cooking Instructions
Clean fish, then make shallow cuts on surface. Marinate fish with wine & salt for 20 mins. After marinating, pat fish dry. Heat oil in wok to high heat. Deep fry fish (about 6 minutes) until golden brown. Drain & place on serving platter. Pour soy sauce mixture over fish while hot. Garnish with chopped Chinese parsley & green onions. Serves 4.
