Cold Ginger Chicken

1 large family pack Chicken thighs or 1 whole chicken
1 large piece Fresh ginger
4-5 Garlic cloves
1 bunch Green onions
2 tsp Salt
1/4 C Cooking oil
Cooking Instructions
Debone chicken thighs, and for the health concious, take off the skin, or use 1 whole large chicken. Bring a large pot of water to a boil. Add salt and chicken to water. Cut up half of the ginger into slices and add to water and chicken mixture. Bring to a simmer and cover. Turn off the stove and let sit for 45 minutes or until cooked.

In the meantime, heat up the oil in a small frying pan and add 1 tsp salt into oil, stir until the salt is dissolved, turn off the stove. You can use a food processor to chop all the other remaining ingredients, or chop it by hand. Mince the green onions, peel the garlic and mince fine, peel the ginger and mince fine. *Note: I use a grater it makes it so much easier with the ginger and garlic. Add minced green onions to oil and stir. Add ginger and garlic to oil a little at a time to taste. You do not want to have an overpowering taste of ginger or garlic. Drain chicken and cut into bite size pieces and cool. You can use the chicken broth for something else too. Once chicken is cold, arrange on a platter and spoon the green onion mixture over the chicken.
