1-2 lbs Boneless chicken breast
1 can Coconut milk
Hawaiian salt
Black pepper
1 can Chopped spinach
Cooking Instructions
In 2 1/2 quart crock pot put the chicken breast and sprinkle with Hawaiian salt and black pepper. Add 1 can coconut milk. Leave on low for several hours. When chicken is cooked, shred and add 1 can spinach (no need drain). Serve over rice.
Additional Comments
I usually cook the chicken the night before all night, then shred it in the morning. When ready to eat just warm up about an hour before we eat.
