2-1/2 lbs Boneless pork
2 Tbsp Honey (warmed)
1 Tbsp Salt
4 Tbsp Shoyu
4 slices Ginger, peeled
3 Tbsp Honey, warmed
2 Tbsp White sugar
2 goves Garlic, crushed
2 Tbsp Rice wine or dry sherry
1 Tbsp Chinese 5-spice powder
2 Tbsp Hoisin sauce
pinch Red food coloring
Cooking Instructions
Cut pork lengthwise (~2" thk. & 8" long). Mix marinade in large bowl or pan & add pork. Marinate for 6 hrs. or overnight in refrigerator, turning occasionally. Preheat oven to 400 F. & place a roasting pan filled w/ 1/2" of water on the base. Place pork pieces flat on a wire rack set high in oven. Roast 20 min. Turn over & brushed w/ pre-warmed honey. Continue to roast 15 min. Turn & brush w/ honey again. Roast another 15 min. (should have nicely charred edges). To serve, slice finely thin across the grain.
