Baby Back Pork Ribs

1 package Baby back pork ribs (Costco has good ones)
1/2 C Red current jelly or guava jelly
3/4 C Shoyu
1 Tbsp Honey
1 Tbsp fresh Ginger
2 cloves minced Garlic
1 tsp Whiskey
I often double or triple this sauce.
Cooking Instructions
Mix together jelly, shoyu, honey, ginger, garlic and whiskey till well blended. Set aside. In large pot, place ribs (cut in sections to fit pot) and boil with 1 index size ginger that you have sliced. Cook ribs til done but NOT falling off bones. Drain and wash ribs of the gunk. If you like, peel the fatback off (the stuff that is on the back of the bones that stick in your teeth). Put ribs in pan, brushing and pouring on each set of ribs the sauce. Put in refrigerator and every so many hours, move around so that all the pieces will have marinated well. It's better if you marinate overnight. You can heat up in the oven covered with foil at 350 til hot or take on picnic and BBQ on grill, basting with remaining sauce, until heated through. Cut in individual ribs and enjoy. Any remaining sauce, boil and serve over rice!
