Mom's Carrot Cake

2 tsp Cinnamon
2 C Flour
1 tsp Baking soda
1 tsp Baking powder
2 C Sugar
1 tsp Salt
5 Eggs
1 1/2 Cups Mazola oil
1 pkg Carrots, grated
1 C Walnuts
1 med can Crushed pineapple, drained
8oz Cream cheese
1 box Powdered sugar
1/2 stick Margarine
1 tsp Coffee (optional, but oh, so ono when added!)
1/2 C Walnuts (optional)
Cooking Instructions

Sift dry ingredients. Stir in oil. Add eggs, carrots and pineapple and mix well. Line two 9" round pans with waxed paper (or grease and flour very well). Bake at 350 degrees for 35 minutes.


Cream cheese, sugar and margarine. Stir in coffee and nuts. Frost cooled cake.
