1 1/4 C Mochiko
2/3 C Sugar
1 1/4 C Water
Food coloring, if desired
Nonstick baking spray
Potato starch
Cooking Instructions
Mix Mochiko and sugar. Add water slowly, mixing to prevent lumping. Stir in 2 or 3 drops of food coloring. Spray a microwaveable bundt cake pan with nonstick spray. Microwave under cook control 60% for 3 minutes. Then cook under 80% power for and additional 3 minutes. Cover a 9x13 pan with potato starch to prevent sticking. Flip bundt pan over 9x13 pan to remover the mochi. Use a plastic knife to slice mochi. Coat each piece with potato starch.
