1 pkg (16 oz.) Chinese brown sugar
2 C Boiling water
1 pkg (16 oz.) Mochiko
1 can (12 oz) Frozen coconut milk, thawed
1/4 C Oil
Sesame seeds
Cooking Instructions
Dissolve brown sugar in boiling water. Stir in mochiko gradually. Add coconut milk and oil. Beat to smooth out ingredients. Pour mixture into a 5-cup tube pan sprayed with nonstick spray. Cover loosely. Microwave on HIGH for 16 minutes. Let stand 10 minutes. Sprinkle with sesame seeds. Cut into pieces with plastic knife.
