Guava Chiffon Cake

2-1/4 C Sifted cake flour
1-1/2 C Sugar
3 tsp Baking powder
1/2 tsp Cinnamon
1 tsp Salt
1/2 C Oil
5 Egg yolks
1 C Guava pulp (fresh or frozen concentrate)
1/2 C Guava juice
5 Egg whites (or more)
1/2 tsp Cream of tartar
Red food coloring to make the cake pink (optional)
Cooking Instructions
Sift dry ingredients into a bowl. Add oil, egg yolks, guava pulp, and juice. Beat well. In a large bowl beat egg whites and cream of tartar until stiff. Carefully fold the flour-egg mixture into the beaten egg whites. Do not overstir. Pour into 10-inch tube pan. Bake at 325 degrees for 65 minutes. Invert pan and cool.
