Cassava Cake

2 pkgs Frozen grated Cassava
1 bottle Sweet coconut (macapono)
1 can Condensed milk
1 can Coconut milk
1/4 C butter
Cooking Instructions
Mix all of the ingredients in a mixing bowl and put in the oven for 35 minutes or until top is lightly browned. Bake it on 350 degrees.

Look for the grated cassava, and macapono at your closest Asian store.

This is the best testing bibinka-like cake you won't forget. For those of you that don't like eggs, this cake will be for you. There are no eggs added into this recipe. It's so fluffy and naturally sweet without adding any sugar. While it's still warm, enjoy it with a cup of coffee or milk. Besides it's easy to make. I got this recipe from an acquaintance. My in-laws and friends of mines request for it whenever we have gatherings.
