1 large Chinese cabbage
2 Tbls salt
3 Tbls chopped green onion
1 Tbls chopped/grated garlic
1 Tbls chopped/grated ginger
2 Tbls ground red pepper chili powder
1 Tbls fish sauce
1 Tbls soy sauce
1 tsp sugar
1 tsp sesame seed oil
Cooking Instructions
Cut or tear Chinese cabbage into 1-2 inch pieces. Sprinkle the cabbage with salt, making sure that all the cabbage pieces come in contact with the salt (use your hands to mix the pieces in a large bowl). Let stand 1-2 hours. Rinse the cabbage in water and drain well. Mix the sauce ingredients in a small bowl. Add sauce (paste) to cabbage and mix well by hand in a large bowl. Place in jars, cover, and let stand overnight for best results.
