35 green mangoes (Chinese or common)
Hawaiian Salt
3 cups brown sugar
1/4 cup dark molasses
1/2 tsp. Chinese five-spice
1/2 tsp. red food coloring
Cooking Instructions
Peel green mangoes. Cut in half. Throw away seed, if possible. Sprinkle salt over mangoes and dry in single layers in the sun for 4 days. Cover mangoes with water and cook for 30 minutes. Drain. Add sugar and molasses. Cover and cook over low flame for 15 minutes. Add five-spice and coloring. Cook for 5 minutes. Store in glass jars.
