Chinese Oxtail Soup

1 oxtail
1/2 lb raw peanuts (shell, cover with hot water to remove red skins)
1 piece ginger root
pinch of sugar
2 tsps oil
10-12 cups hot water
2 Tbsp shoyu
1 Tbsp sherry, or more to taste
6 dried plums
Cooking Instructions
Have oxtail chopped into pieces. Wash, parboil for 2 minutes and drain. Heat pan, add oil. Add oxtail and ginger, sauté for a minute then add rest of ingredients. Bring to a boil and keep boiling over slow flame until oxtail is tender (2 1/2 - 3 hours). Season to taste with salt and sherry.
