Japanese Chicken Salad

1-1/2 cups mayonnaise
1/2 tsp. curry powder
1 Tbsp. soy sauce
4 cups chopped cooked chicken or turkey
1 (8 oz.) can sliced water chestnuts, drained
1 lb. seedless grapes, cut into halves
1 cup chopped celery
1-1/2 cups slivered almonds, toasted
Cooking Instructions
Combine the mayonnaise, curry powder and soy sauce in a bowl and mix well. Combine the chicken, water chestnuts, grapes, celery and almonds in a large bowl and mix well. Add the dressing and toss to mix. Chill until serving time. Serve on lettuce-lined salad plates. Garnish with pineapple or paprika.
